PRDV 70818 Using Nutrition and Physical Activity Messages in Middle School Curriculum

A study of the integration of nutrition concepts into middle school curriculum using Planet Health. Planet Health is an interdisciplinary curriculum focused on improving the health of 6-8th grade students while building and reinforcing skills in physical education, language arts, math, science, social studies, health, and family and consumer sciences. The Planet Health curriculum is aligned with the
Massachusetts Curriculum Frameworks in these areas.

PRDV 71021 Hydration and Beverages

An overview of hydration including basic requirements for children and adolescents, and hydration needs for student athletes. Topics addressed in the course include: the current beverage environment; common ingredients and
additives; beverage guidelines for schools; and the role of beverage marketing and beverages in the school environment.

PRDV 71120 CRN 50364 Childhood Overweight: Exploring an Epidemic
Instructor: Alison Rainey Doak, MS, RD
An investigation of childhood obesity for teachers, school nurses and other school professionals concerned with this emerging issue. Participants investigate how overweight is assessed and explore data on the prevalence. Health implications of overweight in children and strategies that schools are using in and out of the classroom to address this complex issue will be presented. A variety of resources for schools and families will be shared.

PRDV 71621 Feeding Children with Special Dietary Needs
Instructor: Christanne Smith Harrison, MPH, RD
Reviews regulations for schools concerning the special dietary needs of children,including school food service regulations. Participants examine selected disabilities, issues that impact nutrition, intervention strategies and environmental considerations.

PRDV 71721 Food, Community and Culture
Instructor: Janet Schwartz, MS, RD, LDN
An introduction to the socio-cultural aspects of food and nutrition for teachers, nutrition professionals and health educators. Using the Camphino-Bacorte Cultural Competence Model, cultural awareness, skill, knowledge,
encounters, and desire are covered. Students explore their own cultural values and those of their communities and students/clients.

PRDV 76518 CRN 50362 Culture and Food: Mexico, Central America and the Caribbean
Instructor: Christanne Smith Harrison, MPH, RD
Explores the differences in Hispanic culture and lexicon through the context of food and addresses the impact of geography on food choices. The content is specifically aligned with the Grade 4 Learning Standards of the
Massachusetts Curriculum Frameworks in History and Social Science and will focus on Mexico, Central America and the Hispanic countries of the Caribbean. Material may be adapted for grades 1-6.

PRDV 78317 Exploring Food Allergies
Instructor: Christanne Smith Harrison, MPH, RD
An in-depth review of food allergies for teachers, nurses and other school personnel. Participants will examine the issues facing children with food allergies including the causes, symptoms, diagnostic tools, treatment,
prevention, current research, and food labeling.

Science in the Classroom
Instructor: Sharon Gallagher, M.Ed., RD, CSE
An update for teachers on the application of nutrition principles and research that support
dietary guidelines established by the government and voluntary health agencies. Current dietary issues include: heart disease, vitamin supplementation, fad diets, and child and adolescent health. Resources for classroom instruction are presented along with computer applications in nutrition education. This course
cannot be applied to graduate or certificate programs for nutritional professionals. Credit will not be given for this course and NUTR 760
Nutrition Science in the Classroom.
Prerequisite: Bachelor’s degree.
