I know most elementary schools have PE only once or twice a week. I personally think that is not nearly enough. How would I go about getting more days of PE through the week and not just one day?

You need to become an advocate. Do your homework on the benefits of regular participation in physical education. Make sure you spend time focusing on the difference in physical education to recess or throw out the ball. When ready, make sure you talk with your principal and the parents at your school. The more people you can get on board the better. Finally, make a point to visit a lot of meetings for the school board.

Don't get frustrated if this doesn't change over night. Many times, you have to change people's opinions on physical education before showing them the importance of going to physical education every day. Good Luck!
